Is that at max deflection? (the end of cam)
Also, I've see on reddit you put the unit together following the video, even if it's specified in there that you should taka pictures of your setup and put it back together like it was instead of following the video. Your cams have an attached washer on a side; there should be no other washer on that side of the cam, can you confirm there isn't?

There is literally no way of determining the orientation of a washer or nut, as they're supposed to be symmetrical anyway, so taking pictures is completely useless for that purpose.
This is how the one on the long side is assembled, as can be seen in the picture, left to right: nut, washer, body, washer, cam, screw. Just as in the video.
This is how the one on the short side is assembled, as can be seen in the picture, left to right: screw, body, cam, washer, nut. Just as in the video, there's only one washer on this part.

No man, the orientation of the washer is in relation with the cam, not with its own center. It matters on which side of the cam the washer or spring washer is positioned. For example, in your picture that spring washer 2 shouldn't be there, as on that side the cam has the built-in washer 1. Remove it and try again please. When you're tightening the nut make sure the bolt, cam, inner cylinder of the ball bearing and nut are moving TOGETHER. The cam should not rotate around the bolt.

As you can see, the second one is still a bit off the center, but now there are washers only beside the nut. I've made the video just to confirm that everything is as you stated it should be.
Once you've verified, I have to unfortunately state that the grinding is still there, still when moving up and right, to the outer side of the cams. Left and down still no grinding, it goes smoothly.

Tighten a bit more the nuts, it seems to me like the cams are still turning around the bolt. If this still doesn't resolve the issue I suggest to put everything in a drawer and forgot about it for the next 24 hours. Then get back to it, watch the video I've linked earlier, see if there's anything you missed. Put it back together and game with it for another 24 hours, see how it goes.
You'll also have to consider that finding all kinds of flaws could be a form of buyer's remorse; please don't get offended by this - it's there and it happens, no one's to blame about it. For your peace of mind, you could return it if you're not completely happy with it.
