NG firmware

I read that it was possible to use NG firmware for my device (GFIII and MGCPRO-U).

May I use it ? if yes which version (latest or not the latest one) ?
What are the risks to use this firmware ?
Is it very different from standard firmwatre ?
Is there a user's manual for it ?

The NG software is still in beta, you could use it on your own risk; it won't damage your device, but some things might not work as expected. It is advisable to be at least a bit comfortable with the regular native software, as it's a bit more complicated than it.
