To our shame, we haven't flown sailplanes (yet).

It's quite simple
Have a look at condorsoaring.com realistic soaring sim. I use it in the winter period to train, maybe it can be a new market opportunity. I mean... They still advice using the Microsoft side winder force feedback 2 that thing is quite old...

I guess it's a 'look & feel' thing - more feel than look though. Having flown gliders a few times, I do get why this question is being raised.
Glider sticks are usually literally just a stick/pipe sticking out of the cockpit 'floor' / seat with just one or two buttons at your disposal. The fancy sticks are exactly what the picture shows a couple of posts back.
My personal take on this is that this is a niche market in simulation where only a few would really buy a pure glider grip. If anything, it would be wiser to try to add a button or two to the GF MCG Pro extension. Just because the extension itself is a fairly close approximation of your garden variety glider stick.
