I recently bought a Gladiator mk II and was trying to use it in Ace Combat 7, however I couldn't configure it to use the joystick.

What joystick did you use in Ace combat 7 before getting a VKB product?

Since Ace Combat is console port, officially support small number of joysticks, like this model exclusive for consoles:

HORI HOTAS Flight Stick for PlayStation 4
HORI HOTAS Flight Stick for XBOX ONE

But support for Thrustmaster products was expanded recently:
