I left out shipping when I placed my order because I assumed that the UCM would be back in stock in a timely manner. But since this takes longer than expected, I would have the Omni Throttle delivered earlier and separately. What do I have to do for it?

I Originally I wanted to get the Omni Throttle and the UCM sent together. So I didn’t put the hook on DHL because i wanted to have it delivered with #xy. But now that I know it will take more than a month for the UCM to be available, I would rather have the Omni Throttle delivered independently of the UCM. But for that, I would have to pay for the shipping afterwards, for example.

That would definitely work. Just make sure you'll order the KG12 grip with NXT connector - if you can't find it in the store, then write them to send you a custom invoice.

If you don't want to wait for the sea container, then you could order the piece by airdrop.
