On the STECS Throttle System – Max, the cable between the STECS and the STEM module seems to be an USB C cable.

I need a longer cable to offset it.

I tried with a standard usb C cable which work for my PS5 device, but when i use that cable, the STEM doesn't work.

Can you confirm that this cable is proprietary, and can we buy a longer cable ?

It is proprietary, but USB3-capable cables may work. No guarantees though.
VKB does sell a longer (~40 cm) cable, and I have made good experiences using a USB-C 3.0 coupler to join two VKB cables together - though again, no guarantees, even if the wiring matches up and everything fits mechanically, extended cables are more susceptible to noise and may experience voltage drop.

I didn't find the longer cable on the shop.

joining two cables together (e.g. the 40 cm cable and the included 28 cm cable), but VKB does not recommend it because longer cables means less stable power and higher risk to signal integrity.

I would have preferred a 1m cable

I understand why i didn't find the cable in the shop. It's not in the STECS accessories.
