When I flip the trigger forward, I would like my pitch and roll to be only 25% of the default excursion (saturation) for a 'stick to trimmer mode'
I cannot seem to find a tutorial on youtube for this. Is there a simple step by step write up for this somewhere?

Try the DR feature, as presented in the Curves guide.

Specifically with a D.Rate of 1:4, set on the Global >> Common page.
