I recently reflashed my MCG Ultimate to firmware 2.09. After calibrating, my z axis is stuck at max value. I don't have a twist adapter, so I shouldn't even have a z-axis. Can this be safely ignored or is there something else I missed?

Yep, don't worry about that. Considering that you flashed the 'no twist' firmware, then that axis is dead, even if it's still showing up in tester.
