Gladiator NXT - Configuring Encoders to Axes

Standard spruings which came with joystick new.

I am using the joystick in Microsoft Flight Simulator 2020 and wouldlike to re-configure the 2 encoder wheels to operate like axes.

I would like:
- Encoder1 wheel to trim lattitude pitch (up and down) on the plane. (Not to retun to center or zero when I stop turning the wheel i.e. to keep pitch position upor down)
- Encoder 2 wheel to operate horizontal rudder (left and right), but to return back to center zero (plane to move dead straight forward) when I stop turning the wheel.
