I'm new with this joystick. I downloaded and calibrated the MK3 with the firmware. But I am having a jerk issue. Likes it's sensitive. I am moving both Axis and when I do, the other Axis moves slightly as well. When I am playing DCS, my plane is jerking as well. I downloaded it to YouTube. How can I fix this. Also, my Rudder is not working on DCS as well. It doesn't recognize it in the control setting options in the game. Like it doesn't work at all.

You'll need to train your hand friend and learn how not to bleed axes when flying. I presume you're on the standard Avia-S cams and #20 springs; I suggest to change to Avia-H cams and at least 2x30 springs per cam - this will make the axis detent more pregnant and your movement more stable. Here's a guide for swapping cams and springs.
