Can someone please explain how to reduce sensitivity in X/Y/Z axis so the plane doesn't react strongly to small motion?
Change either in sensitivity, response curve or both, whatever you think would be most helpful.
I reviewed the manual but I don't understand half the terminology used.
I was thinking adding resistance to the clutch could smooth out the return to center as well, however it ends up feeling more sticky than smooth.

Please follow this video to get your device calibrated properly; according to your screenshot there are lots of uncalibrated axes in there which might act up in game. You don't need to flash, just calibrate.
You could also adjust every axis' sensitivity, by either checking the video posted above by Hon0, or simply adjusting the sensitivity in game.
