Please show Axes tabs - Physical and logical. Try to save your profile and then push Default button (Tools tab).
Try to check if you return to previous firmware - will axes work?
Sometimes newer does not mean better)

Ok, I've tried different firmware versions and nothing is working.

Should I be seeing this?

The first window indicates that a calibration was performed in Windows. That for joysticks VKB is extremely not desirable and offers to delete these settings. With consent, this will happen. After that you need to calibrate in the configurator and everything will fall into place. It does not hurt after that to add to the existing screenshot of the Global tab.

The calibration message box always pops up no matter how many times I calibrate in VKBConfig and saving the profile.

All the axis still jump to and from the extreames no matter what firmware I use or how many times I calibrate.

And why is not the special profile http://ftp.vkb-sim.pro/Profiles/Gladiator/GLPro_W_A7_37_HAT0.zip for the Warthog grip loaded? Without it, nothing happens.
You must answer Yes, when you are prompted to adjust the settings. Then make a calibration. You have not done it - this is indicated by the lack of active check-box Cal in Global. See how the KdHi, KdLo and Bias values change after calibration. You can see it in this https://yadi.sk/i/m_5T-4Db39fhnv video.
If this also does not help, we uninstall our joystick using USBDeview. And after that we connect again and perform the profile upload and calibration again.

With the profile, I've already done that ... see previous pages.

Is there any documentation for using VKBConfig and what the options mean / do ?

Edit ... I've got working now, wiping the below registry settings done the trick ...

[-HKEY_CURRENT_USER\System\CurrentControlSet\Control\MediaProperties\PrivateProperties\DirectInput\Vid_231D&Pid_0121\Calibration]
[-HKEY_CURRENT_USER\System\CurrentControlSet\Control\MediaResources\Joystick\DINPUT.DLL\CurrentJoystickSettings]
