Watch this video on disassembling.
But you must have a pedal BlackBox (or orange first version), connect the pedals to it and check the operation.
And if after this the pedals do not work, then you need to disassemble them.

I connected the rudder to the Orange Box and then Orange box to PC USB and the pedals are recognized in VKB Device Config, appears to work now. Does this mean there is a problem with the RJ45 connector in the Gladiator stick?

This is where you need to look for the cause.
Take a close-up photo of the Sys and Pedals connectors, maybe that's where the problem lies.
And a photo of the Gladiator board itself wouldn't hurt.
Perhaps there is not enough power for the combine from the USB port, you can check the voltage coming to the block in the joystick and after the stabilizer. But for this you need a multimeter. Or connect to other USB ports or try on another machine, laptop.
Explanations for the picture - 1 - black probe of the multimeter, red numbers - points of the voltage of interest.

This is so strange. I had just used the rudder pedals to play a game last night since it was working after I connected using the Blackbox I have. Now I come home from work and the "SYS" and "PEDALS" lights are flickering rapidly and the pedals are no longer recognized in VKB Device Config. The only thing that I did was turn off the computer at night as I usually do. I tried other USB ports on the same computer and still it's unable to connect to Windows (SYS and PEDALS lights flicker rapidly). I then tried to connect the pedals with the Blackbox to another computer and the same thing occurs - pedals do not connect in Windows and the SYS and PEDALS lights flicker rapidly. But then I come back to my computer and plug it in and the pedals suddenly connect to Windows, and the SYS and PEDALS lights are on and not flickering - everything appears to be working again. Now I'm wondering if shutting down the computer with the stick and pedals connected (or powering everything on) is causing something to trip off in the pedals. I will open up the pedals and stick when I have more time on the weekend.

I think I found something:
Signs of heat damage at the RJ45 connector. There is some discoloration of the individual contacts as well as melting of the plastic in between. It seems those contacts have been shorting out to the bottom plate of the stick.
The pedal connector looks fine:
Voltages measured:
1-2: 4.97V
1-3: 4.91V
1-4: 3.32V
1-5: 3.31V
