I have dual Gunfighter Mk.III's and when I twist the z-axis, it seems impossible not to cause a side-effect change in the Y axis on both of them. I have been tinkering with the configuration, but I don't really understand it well enough. What should I change to make the y-axis less sensitive near the center? I messed with the dead zones, but I doubt I am doing right.

Few things you could try:
- stronger springs on Y axis;
- larger deadzone on Y axis;
- hard cams (either Space or Avia), at least on Y axis.
Here's a guide on how to adjust your base.
Also, if you really like the current set up and don't want to change from it, there's always the option to train more so you won't bleed into Y axis anymore

How do I increase the dead zone in the configuration. There are several settings there, 2-D 3d spacial, rotxyz and lots of settings. How to I increase the dead zone of just the y axis?

If 2D box is checked just uncheck it, then adjust the DzLo for Y axis. Don't go over 3 though. Press Set to save.
