I can see how to do this - similar to how to bind a keyboard key.
The problem is I cannot find anything about in the manual are the settings needed in the Global / Mouse area. They all seem to be about mouse movement emulation - not what I need to do.

I know the exact problem you're describing, I have the same issue. It certainly has nothing to do with the sticks, I think it's a quirk of the coupled flight mode.
